Another great holiday recipe!

I am getting ready to go to a Thanksgiving Dinner tonight for one of the groups I am a part of here in Germany.  It’s a big pot luck style dinner so I am bringing a few things with me.  I made some corn bread today that is more moist than most of the corn breads I’ve had in the past.

Ingredients:

  • 1 cup cornmeal
  • 3 cups flour
  • 1 1/3 cups sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2/3 cup canola oil
  • 1/3 cup melted butter
  • 2 tablespoons honey
  • 4 eggs (beaten)
  • 2 1/2 cups 2% milk

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in large mixing bowl. Press out any large lumps.
  3. Heavily grease 9×13 baking pan.
  4. Pour batter into greased pan. Bake for 45 minutes or until it is starting to turn golden brown and a toothpick comes out clean.

It’s a pretty easy recipe, but it’s very good.  It’s slightly sweet and very moist, especially for a corn bread! If you want to make something from scratch, but still keep it simple, this is a great recipe. Enjoy!
